Pancake Tuesday at Transport 17

For many of us, it brings back memories of childhood — standing on a chair to help mix the batter, racing siblings to the table, or watching a parent confidently toss a pancake into the air.


At Transport 17, we know it’s often the simple traditions that mean the most. Food has a way of bringing people together — sparking conversation, laughter and shared memories. Whether it’s at home, at a lunch club, or with friends, Pancake Tuesday is a lovely excuse to pause and connect.

So here’s a classic British pancake recipe to enjoy today.






Classic Pancakes Recipe

These are the traditional thin pancakes — perfect for rolling up with your favourite toppings.

Ingredients (serves 4)

  • 100g plain flour

  • 2 large eggs

  • 300ml milk

  • Sunflower oil (for frying)

  • A pinch of salt

Method

  1. Put the flour and salt into a bowl and make a well in the centre.

  2. Crack in the eggs and add a splash of the milk.

  3. Whisk gradually, drawing in the flour, until smooth.

  4. Add the remaining milk, then whisk until you have a thin batter.

  5. Heat a little oil in a non-stick frying pan.

  6. Pour in enough batter to coat the base, swirling to spread evenly.

  7. Cook until golden underneath (about 1 minute), flip, and cook the other side.

  8. Stack on a warm plate and repeat.
